Maple Mustard Brussels Sprouts

These Maple Mustard Brussels Sprouts are a flavorful side dish! They're roasted with a maple syrup, Dijon mustard, garlic and Sriracha glaze.

These Brussels Sprouts are packed with flavor and make a great side dish. They're roasted until crispy and then tossed in a sauce that's sweet, tangy, and a little spicy.

When it comes to side dishes, it doesn't get any easier than roasted vegetables. Brussels sprouts are one of my favorite veggies to roast in the oven because the roasting process helps them to become tender and brings out their natural flavor and sweetness.

The edges of the Brussels sprouts become crispy and irresistible. Brussels sprouts lend themselves to all kinds of flavors and adding a glaze at the end of the cooking process creates another layer of flavor.

These Brussels sprouts are tossed in a glaze made with maple syrup, Dijon mustard, garlic powder, and Sriracha hot sauce. It makes the dish a bit tangy, sweet, and spicy.

They're garnished with some toasted almonds and a squeeze of fresh lemon juice. The almonds add a crunchy texture and the lemon juice provides a bright freshness to offset the richness of the glaze.

How To Cut Brussels Sprouts

The process of cutting Brussels sprouts is easy to do and essential if they are roasted in the oven.

  • All that's needed is to remove any dirty or damaged outer leaves and then to cut the bottom portion from each sprout off with a knife. The damaged outer leaves and bottom of the sprout may be discarded.
  • Each of the Brussels sprouts is then cut into halves or quarters, depending on their size. Smaller Brussels sprouts may be cut into halves, but larger ones should be cut into quarters.
  • It's important that the Brussels sprouts are relatively the same size after cut so that they cook evenly.

Brussels sprouts grown in a garden or purchased from the farmer's market will be attached to a stalk and need to be removed. If still attached to the stalk, simply pull each of the sprouts off with your fingers.

If purchased from a grocery store, the Brussels sprouts will come in a bag. This recipe calls for 2 lbs. of Brussels sprouts, which will likely equal 2 bags, as one bag generally equals 1 lb. of Brussels sprouts.

Ingredients For Maple Mustard Brussels Sprouts

Here's what you'll need to make it.

  • 2 lbs. Brussels Sprouts (equals 6 cups chopped)
  • 5 Tbsp. Olive Oil (split)
  • 2 Tbsp. Dijon Mustard
  • 2 Tbsp. Maple Syrup
  • 2 Tbsp. Vegetable Broth
  • 2 tsp. Sriracha Hot Sauce
  • ½ tsp. Garlic Powder
  • ½ tsp. each of Kosher Salt and Pepper (split)
  • 1 Lemon
  • ¼ cup Toasted Almonds (unsalted) (or unsalted nuts of choice)

How To Roast Brussels Sprouts In The Oven

Roasting vegetables in the oven is super easy to do and Brussels sprouts are no exception.

All that's needed to roast them is to divide the chopped Brussels sprouts in half and place them onto two separate baking sheets where they are coated with olive oil, kosher salt and pepper.

The Brussels sprouts are roasted for 16 minutes and then tossed in the maple mustard glaze. They are roasted for another 4 minutes at that point, which helps to caramelize them in the sticky glaze.

  1. Heat the oven to 400 degrees Fahrenheit.
  2. Remove any dirty or damaged outer leaves from 2 lbs. of Brussels sprouts (remove the Brussels sprouts from the stalk first if needed).
  3. Cut the bottom portion of each sprout off with a knife and discard.
  4. Cut each of the Brussels sprouts into halves or quarters, depending on their size. Make sure that all of the chopped Brussels sprouts are relatively the same size to ensure that they cook evenly.
  5. Divide the chopped Brussels sprouts in half and place each half onto a baking sheet (feel free to add any of the leaves that have fallen from the Brussels sprouts to the baking sheet).
  6. Drizzle 2 Tbsp. of olive oil over each of the baking sheets.
  7. Sprinkle ¼ tsp. each of kosher salt and pepper over each baking sheet.
  8. Toss the Brussels sprouts until completely coated in the oil and seasonings.
  9. Place the baking sheets into the oven and roast for 16 minutes.
  10. Remove the baking sheets after 16 minutes.

How To Make Maple Mustard Glaze

The maple mustard glaze that's tossed onto the Brussels sprouts near the end of the cooking time may be prepared while they're roasting in the oven.

It's made with only a few ingredients, but packs a lot of flavor.

  1. To make the glaze, combine 2 Tbsp. maple syrup, 2 Tbsp. Dijon mustard, 1 Tbsp. olive oil, 2 Tbsp. vegetable broth, 2 tsp. Sriracha hot sauce, and ½ tsp. garlic powder to a small bowl.
  2. Stir all of these ingredients together until completely combined using a fork or a small whisk.

How To Toast Almonds In A Skillet

Adding some toasted almonds is a great way to provide these Brussels sprouts with a crunchy texture and extra flavor.

You can purchase almonds (sliced, slivered, or whole) that are already toasted or you can roast them in a small skillet if needed.

Roasting the almonds brings out their natural oils and intensifies the flavor. It only takes a few minutes and can be done while the Brussels sprouts are roasting in the oven.

Feel free to substitute any variety of nuts in place of almonds if preferred. Hazelnuts, walnuts, or pistachios are all great choices. Pumpkin seeds or pepitas may be used as well.

  1. To roast the almonds, place ¼ cup of unsalted almonds (or unsalted nuts of choice) into a small cast iron skillet.
  2. Roast the nuts on medium-low heat for 4-5 minutes, stirring often to prevent them from burning.
  3. Remove the skillet from the heat and set aside.

How Long Does It Take To Roast Brussels Sprouts In The Oven?

The whole process of roasting these Brussels sprouts in the oven only takes about 20 minutes.

The glaze is added near the end of the cooking process and the Brussels sprouts are finished coated in it. The addition of the maple mustard glaze adds a sweet, sticky layer of flavor that complements the charred and crispy Brussels sprouts nicely.

  1. After 16 minutes, remove the baking sheets from the oven.
  2. Pour half of the maple mustard glaze over each of the baking sheets.
  3. Toss the Brussels sprouts in the glaze until they are completely coated.
  4. Return the baking sheets to the oven and roast for another 4 minutes.
  5. Remove the baking sheets from the oven.

What To Serve With Maple Dijon Brussels Sprouts

At this point the Maple Mustard Brussels Sprouts are ready to serve!

Dish them up and finish them with a squeeze of lemon juice. I recommend not skipping this step as the acid helps to brighten up the flavors.

Garnish the Brussels sprouts with the toasted almonds or nuts of choice.

Brussels sprouts are an all-around great side dish and pair well with any type of meat from chicken to beef to pork. This recipe is dairy free, vegan, and gluten free so it's suitable to all kinds of diets.

It can be served alongside tofu or tempeh as well as on top of wild rice, quinoa, or lentils.

Roasted Brussels sprouts are perfect served with roasted or grilled chicken, beef, or pork.

Brussels sprouts also make for a nice Thanksgiving or Christmas side dish. It's one of those vegetables that peaks in late summer and is typically served throughout the holiday season.

It pairs nicely with sandwiches like this Gouda chicken grilled cheese or curried chickpea salad sandwich.

The flavors of these Brussels sprouts are great served with these Korean turkey bowls, Asian ground chicken rice bowls, or teriyaki turkey rice bowls.

How Long Do Brussels Sprouts Last In The Fridge?

Leftover Brussels sprouts should last 2-3 days stored in an airtight container in the refrigerator. They are best enjoyed right out of the oven as they may lose some crispiness in the fridge.

I do not recommend freezing them, as this can result in a soggy and unappealing texture.

This recipe may be cut in half if needed.

  • 2 lbs. Brussels sprouts about 6 cups
  • 5 Tbsp. olive oil split
  • 2 Tbsp. Dijon mustard
  • 2 Tbsp. maple syrup
  • 2 tsp. Sriracha hot sauce
  • 2 Tbsp. vegetable broth
  • ½ tsp. garlic powder
  • ½ tsp. kosher salt split
  • ½ tsp. pepper split
  • 1 lemon
  • ¼ cup toasted almonds unsalted, or unsalted nuts of choice

Instructions
 

  • Heat the oven to 400 degrees Fahrenheit.
  • Remove any dirty or damaged outer leaves from 2 lbs. of Brussels sprouts (remove the Brussels sprouts from the stalk first if needed) and discard.
  • Cut the bottom portion of each sprout off with a knife and discard.
  • Cut each of the Brussels sprouts into halves or quarters, depending on their size. Make sure that all of the chopped Brussels sprouts are relatively the same size to ensure that they cook evenly.
  • Divide the chopped Brussels sprouts in half and place each half onto a baking sheet (feel free to add any of the leaves that have fallen from the Brussels sprouts to the baking sheet).
  • Drizzle 2 Tbsp. of olive oil over each of the baking sheets. Sprinkle ¼ tsp. each of kosher salt and pepper over each baking sheet.
    Toss the Brussels sprouts until completely coated in the olive oil and seasonings.
  • Place the baking sheets into the oven and roast for 16 minutes.
    Remove the baking sheets from the oven and set aside.

Prepare The Dressing:

  • Combine 2 Tbsp. maple syrup, 2 Tbsp. Dijon mustard, 1 Tbsp. olive oil, 2 Tbsp. vegetable broth, 2 tsp. Sriracha hot sauce, and ½ tsp. garlic powder to a small bowl.
    Stir all of these ingredients together until completely combined using a fork or a small whisk.

Toast The Almonds:

  • To roast the almonds, place ¼ - ½ cup of unsalted almonds (or unsalted nuts of choice) into a small cast iron skillet.
    Roast the nuts on medium-low heat for 4-5 minutes, stirring often to prevent them from burning.
    Remove the skillet from the heat and set aside.
    This step is not required if the nuts are already toasted.
  • Pour half of the maple mustard glaze over each of the baking sheets.
    Toss the Brussels sprouts in the glaze until they are completely coated.
  • Return the baking sheets to the oven and roast for another 4 minutes.
    Remove the baking sheets from the oven.
  • To serve: Squeeze a generous amount of fresh lemon juice over the Brussels sprouts. Top with the toasted almonds (or nuts of choice).

Notes

This recipe may be cut in half if needed.
Roasting the almonds (or nuts of choice) is an optional step.
