This Turkey Sweet Potato Hash is just the thing to get you back on track with healthy eating after a decadent holiday season.

Raise your hand if you ate too many goodies and drank too much wine this holiday season! *Raises hand REALLY high* I thought that not eating gluten this year would mean I'd behave myself and not indulge quite as much.
Nope - I think I deluded myself into thinking that because there wasn't gluten in the cookies I was allowed to eat more of them. Oh, well. It's January and we're all probably a little hungover from too many holiday goodies. It's OK - We're all in the same boat here.
If you're trying to get back on track I'm right there with you! I wanted to get back into a healthy routine with something hearty, filling, and flavorful like this breakfast hash.

Do I Need To Peel The Sweet Potatoes First?
Sweet potatoes are great any time of the year but I find that they're extra tasty after the holidays.
Sweet potatoes are hearty and filling (which is great when it's January in Minnesota and we're all freezing), they're healthy, and naturally sweet (which helps to ween us off that cookie sugar high).
You can peel the sweet potatoes if you like but it isn't necessary. There are a lot of vitamins in the peels and it provides for great texture.
This recipe calls for 2 large sweet potatoes. When the sweet potatoes are all diced it yields about 5 cups.
- Thoroughly wash and dry 2 sweet potatoes.
- Dice them into cubes. Try to make sure that the pieces are relatively the same size so they cook evenly.
What Kind Of Sausage Is Best For Hash?
Once the sweet potatoes are diced it's time to start on the sausage. I used a mild ground turkey breakfast sausage for this recipe and thought it worked perfectly.
You can definitely go for a spicy variety if you want a bit more spice.
Feel free to use chicken or pork sausage if you prefer. Pork sausage is higher in fat than sausage made from poultry.
- Start by heating a skillet to medium.
- Once the skillet is warm add 1 Tbsp. of olive oil.
- Add 1 lb. turkey breakfast sausage to the oil and cook for 5-6 minutes.
- Break the sausage apart into chunks as it cooks. Remove the sausage from the pan once it's finished but leave any grease in the pan (this provides great flavor).
This Sweet Potato Breakfast Hash recipe is gluten free and paleo as well if you use a paleo-approved brand of sausage.
How To Make Sweet Potato Breakfast Hash
Once the turkey sausage is fully cooked and removed from the skillet it's time to add the sweet potatoes.
I love to add some savory spices to sweet potatoes because it compliments the sweetness and makes flavors pop.
- Add another Tbsp. of olive oil if necessary and throw the diced potatoes into the skillet.
- Add 1 tsp. garlic powder, 1 tsp. onion powder, 1 tsp. smoked paprika, and ¼ tsp. red chili flakes along with a generous pinch of salt and pepper.
- Saute for a few minutes, stirring often. The sweet potatoes may stick to the bottom so feel free to deglaze the pan with ¼ cup of vegetable stock or low-sodium chicken stock.
How To Keep Sweet Potatoes From Sticking To The Skillet
- The sweet potatoes will likely continue to stick to the bottom of the skillet as they cook. I like to add ¼ cup or so of vegetable or low-sodium chicken stock, stir them around, let them saute for another 5 minutes, and then repeat.
- This continues for 15 minutes or so. The potatoes are finished when they are easily pierced with a knife or fork.
- When the potatoes are finished add the turkey sausage back into the pan along with 2 cups of chopped kale. The pan is going to be really full at this point but kale wilts as it cooks.
- Stir everything together until the kale is wilted and everything is mixed together.
Can I Sub Any Of These Ingredients?
Yes! Feel free to use any greens you like. Spinach, Swiss Chard, arugula - The greens provide a nice bitter flavor and great color.
You can use any variety of potatoes in place of the sweet potatoes if you prefer. Red, Yukon Gold, or fingerling potatoes are great options.
Any variety of ground sausage or ground meat may be used in place of turkey breakfast sausage.

What To Serve With Sweet Potato Hash
You can make it feel like an official 'Breakfast Hash' by adding an egg on top. I vote for adding the egg because eggs are awesome.
This recipe yields 4-5 servings so feel free to prepare 4-5 eggs any way you like.

How Long Does Breakfash Hash Last In The Fridge?
Any leftovers may be stored in an airtight container in the fridge for 3-4 days. Be sure to allow the dish to cool completely before transferring to the fridge for storage.
Eating healthier does NOT mean giving up flavor. This hash is super satisfying. It's the perfect dish to whip up for breakfast, lunch, or dinner.

Ingredients
- 2 large sweet potatoes yields 5 cups

- 1 cup low sodium chicken broth or vegetable broth (gluten free)
- 1 avocado
- 4 eggs prepared any way you like

- Thoroughly wash and dry 2 large sweet potatoes. Dice the sweet potatoes into small chunks. Try to make sure that the diced potatoes are the same size to ensure that they cook evenly.
- Heat a skillet to medium and add 1 Tbsp. olive oil. Once the oil is heated add 1 lb. mild turkey breakfast sausage to pan (use a spicy variety if you want more spice). Saute the sausage for 5-6 minutes breaking it apart as it cook.
- Remove the sausage from the pan once it has fully cooked but leave the grease in the pan (this provides great flavor.

- Deglaze the pan with ¼ cup or so of vegetable stock or low-sodium chicken stock and stir the potatoes, scraping up any bits from the bottom. Repeat this process every few minutes so the potatoes do not stick to the bottom. Add ¼ cup or so of stock every few minutes for 15 minutes or until the potatoes are easily pierced with a knife.
- Once the potatoes are cooked add the sausage back into the pan along with 2 cups of chopped kale. Stir all of these ingredients together until combined and the kale has wilted a bit.
