Sweet Potato Turkey Hash

This Sweet Potato Turkey Hash is a healthy breakfast recipe made with sausage or chorizo, kale, roasted sweet potatoes, and topped with eggs!

Ground Turkey Sweet Potato Hash is a great meal to enjoy for breakfast or anytime of day. It's full of Southwest flavors and can be enjoyed on its own or topped with eggs prepared any way you like!

I love meals that are technically considered 'breakfast food', but in reality are great served any time of the day or night. Hash is one of those meals. It's made with savory ingredients that are tossed together to create a seriously flavorful dish.

Hash is a dish that consists of some combination of meat, potatoes, and onions. The name is derived from the French word 'hacher', which means 'to chop'.

It's often prepared using corned beef, but the dish has evolved to include lots of different ingredients and variations of it can be found across cultures.

This version is a bit healthier than a traditional hash and has a Southwest twist. It's gluten free, dairy free, and made with fresh vegetables like sweet potatoes, kale, bell peppers, and topped with avocado.

What Flavors Work Well With Sweet Potato?

Sweet potatoes are naturally sweet and become even sweeter when roasted, as they are in this Sweet Potato Turkey Hash.

I love to pair sweet potato with savory spices like rosemary, thyme, and garlic and warming ones such as ginger and chili powder.

It's perfect served with salty, smoky, and cured meats like bacon, sausage, prosciutto, pancetta, along with spicy meats like chorizo.

Sweet potatoes are an incredibly versatile ingredient that can be used to make everything from a Thai or Indian curry to Spanish tapas to Southern soul food.

Ingredients For Sweet Potato Turkey Hash

Here's what you'll need to make it.

  • 1-2 Sweet Potatoes (equals 5 cups diced)
  • 3 Tbsp. Olive Oil (split)
  • 1 tsp. Garlic Powder
  • 1 tsp. Onion Powder
  • 1 tsp. Smoked Paprika
  • 1 Bell Pepper (any color)
  • 1 lb. Ground Turkey Sausage (Italian or Chorizo)
  • 2 packed cups Chopped Kale
  • ½ tsp. each Kosher Salt and Pepper
  • 4 Eggs (optional)
  • Avocado, Pickled Jalapeno Peppers, Hot Sauce for garnish (optional)

Do I Need To Peel The Sweet Potatoes First?

It's up to you whether or not you prefer to peel sweet potatoes before roasting them.

I recommend thoroughly washing and scrubbing sweet potatoes before cooking them to remove any dirt or bacteria.

I prefer to peel sweet potatoes when making hash, but you can leave them unpeeled if you'd like.

This recipe calls for 1 large or 2 medium sweet potatoes. This yields roughly 5 heaping cups of diced sweet potatoes.

For this hash, the sweet potatoes are tossed in a combination of olive oil and spices, then roasted in the oven until slightly crispy on the outside and soft on the inside.

Once roasted, the sweet potatoes are tossed in a skillet on the stove top, along with the sautéed bell pepper, turkey sausage, and kale.

How To Roast Sweet Potatoes

The process of roasting sweet potatoes in the oven is simple and can be completed at the same time as the rest of the ingredients are sautéed in a skillet on the stove top.

  1. Heat oven to 400 degrees Fahrenheit.
  2. Thoroughly wash, scrub, and dry 1 large or 2 medium sweet potatoes.
  3. Peel the sweet potatoes with a vegetable peeler (optional).
  4. Dice the sweet potatoes into cubes. Try to make sure they are all relatively the same size to ensure that they cook evenly (yields 5 heaping cups).
  5. Place the diced sweet potatoes onto a large baking sheet.
  6. Drizzle the sweet potatoes with 2 Tbsp. olive oil, 1 tsp. each of garlic powder, onion powder, and smoked paprika, along with ¼ tsp. each kosher salt and pepper. Toss until completely coated.
  7. Place the baking sheet in the oven and roast for 20 minutes, removing the baking sheet at the 10 minute mark to shake them pan, which will help prevent the sweet potatoes from sticking to it. Return the baking sheet to the oven for another 10 minutes.
  8. Remove baking sheet from the oven after 20 minutes and set aside.

What Kind Of Sausage Is Best For Hash?

Hash can be made with any variety of chopped or ground meat.

I wanted this recipe to be a bit healthier than a traditional one, so I opted for ground turkey sausage. Ground turkey is lower in fat and calories than pork sausage, but still provides great flavor and texture.

I recommend a flavorful variety of turkey sausage, such as Italian or mild Italian turkey sausage, or chorizo turkey sausage.

I used Jennie-O Chorizo Turkey Sausage and found it to provide this dish with a great smoky and slightly spicy flavor.

Make sure to use a brand of turkey sausage that is gluten free if gluten is an issue for you.

Feel free to use chicken sausage if you prefer.

How To Make Turkey Sweet Potato Hash

  1. Start by dicing 1 bell pepper (any color).
  2. Roughly chop 2 heaping cups of kale, removing the tough membranes (feel free to use spinach, Swiss chard, or any hearty greens of choice).
  3. Heat a large cast iron skillet (or heavy-bottomed skillet) to medium high.
  4. Add 1 Tbsp. olive oil.
  5. Once the oil is heated, add the diced bell peppers and sauté for 5-6 minutes, stirring occasionally.
  6. Add 1 lb. turkey sausage of choice, along with ¼ tsp. each kosher salt and pepper and cook for 10-12 minutes, stirring often to break the sausage apart into chunks as it cooks.
  7. Continue to sauté the sausage until it is no longer pink, or until it has reached a safe temperature of 165 degrees Fahrenheit (this can be tested using a food thermometer).
  8. Drain any excess fat (optional).
  9. Add the 2 packed cups of chopped kale and continue to sauté for another 2 minutes, stirring until the kale has wilted slightly and incorporated into the hash.
  10. Add the roasted sweet potatoes to the skillet and stir until completely combined.

How To Make Eggs For Hash

This Sweet Potato Hash can be served on its own or topped any way you like. I love just about anything topped with a fried egg, so that's the route I choose to go with this recipe.

The beauty of eggs is that they can be prepared any variety of ways. I love a runny yolk on this breakfast hash, so I usually opt for a fried or over easy egg, but you can serve them scrambled, poached, or even coddled.

I find more success when preparing eggs in a nonstick pan, or a seasoned cast iron skillet.

  1. To make over easy eggs, heat a nonstick or well seasoned cast iron skillet to medium and add 1-2 tsp. of olive oil.
  2. Once the oil is heated, crack 2 eggs in the skillet and cook for 2 minutes, or just until the whites are almost set.
  3. Use a flat, wide spatula to flip each of the eggs over carefully. Cook for an additional 30 seconds on the second side.
  4. Sprinkle the eggs with a small amount of salt and pepper.
  5. Remove from the heat and set on a small plate.
  6. Repeat with the remainder of the eggs.

The egg whites should be completely set and the yolk still runny when serving over easy eggs.

If you prefer eggs over medium or over hard, feel free to cook for another 30 seconds to 1 minute after flipping them.

What To Serve With Sweet Potato Hash

There is no 'wrong way' to serve this sweet potato hash.

I love it with an over easy egg, sliced avocado, and pickled jalapenos.

The Southwest flavors are great paired with a side of black beans, pinto beans, refried beans, or Spanish rice. You can serve it with some warmed corn tortillas if you like.

It's perfect with any variety of toppings such as salsa, pico de gallo, guacamole, sour cream, queso fresco or cheese of choice, cilantro, radishes, pickled onions, or hot sauce.

There are no rules when it comes to topping your favorite breakfast items.

How Long Does Breakfast Hash Last In The Fridge?

Any leftovers may be stored in an airtight container in the fridge for 3-4 days.

Be sure to allow the dish to cool completely before transferring to the fridge for storage.

Can It Be Frozen?

This breakfast has can be frozen, but it's best to prepare the eggs right before serving.

How To Freeze

  1. Prepare the recipe as directed (leaving out the eggs) and allow it to cool completely before transferring to the freezer for storage.
  2. Transfer the breakfast has to a heavy-duty freezer bag or freezer-safe storage container, label with the date, and store up to 3 months.

How To Reheat

  1. Transfer the container from the freezer to the refrigerator 24 hours before reheating.
  2. Once thawed, place the breakfast has in a large skillet heated to medium on the stove top.
  3. Add a few Tbsp. of water or chicken broth and cook over medium until heated through.
  4. Prepare the eggs (optional) and serve.

For The Hash:

  • 2 sweet potatoes yields 5 cups diced

  • 1 bell pepper any color
  • 2 packed cups kale chopped

  • 1 tsp. onion powder
  • 1 tsp. smoked paprika
  • ½ tsp. kosher salt split
  • ½ tsp. pepper split
  • 1 avocado optional

For The Eggs:

  • 4 eggs
  • 1-2 tsp. olive oil
  • pinch kosher salt
  • pinch pepper

Instructions
 

For The Hash:

  • Heat oven to 400 degrees Fahrenheit.
  • Thoroughly wash, scrub, and dry 1 large or 2 medium sweet potatoes. Peel the sweet potatoes with a vegetable peeler (optional).

    After 20 minutes, remove the pan from the oven and set aside.
  • Dice 1 bell pepper (any color).
  • Roughly chop 2 heaping cups of kale, removing the tough membranes (can use spinach, Swiss chard, or any hearty greens of choice).
  • Heat a large cast iron skillet (or heavy-bottomed skillet) to medium high. Add 1 Tbsp. olive oil. Once the oil is heated, add the diced bell peppers and sauté for 5-6 minutes, stirring occasionally.
  • Add 1 lb. turkey sausage of choice, along with ¼ tsp. each kosher salt and pepper and cook for 10-12 minutes, stirring often to break the sausage apart into chunks as it cooks.
    Continue to sauté the sausage until it is no longer pink, or until it has reached a safe temperature of 165 degrees Fahrenheit (this can be tested using a food thermometer).
    Drain any excess fat (optional).
  • Add the 2 packed cups of chopped kale and continue to sauté for another 2 minutes, stirring until the kale has wilted slightly and incorporated into the hash.
  • Add the roasted sweet potatoes to the skillet and stir until completely combined.

Other topping ideas include pickled jalapenos or onions, salsa, pico de gallo, sliced avocado, guacamole, queso freso or shredded cheese, radishes, or cilantro.
