This Sheet Pan Chicken Sausage and Veggies recipe is a healthy 30 minute dinner! It's gluten free, low carb, and made with cauliflower.

Sheet pan meals make for a great dinner option during busy weeknights. This Sheet Pan Chicken Sausage Dinner is made using one pan and ready in a little more than 30 minutes.

This recipe is low carb, gluten free, and is just the thing when you don't want to spend hours cooking a meal only to have a pile of dishes waiting for you when finished.

It's made with fresh vegetables like green beans, cauliflower, and bell peppers, but can be customized by using any veggies you like. This dish uses a mild Italian chicken sausage, which can be swapped for sausages of your choice.

Of all the household chores, washing dishes is one of my least favorite (my husband can vouch for this). Sheet pan meals are perfect when you want something healthy and flavorful without the hassle of messy cleanup.

What Are Sheet Pan Meals?

Sheet pan meals are those in which all the ingredients are tossed together and roasted in the oven using one pan. A sheet pan (also known as a baking sheet or baking tray) is a rectangular metal pan with raised edges.

Those raised edges make sheet pans great for roasting meats and vegetables, because they help to hold in any juices that may be released during the cooking process.

They're inexpensive, versatile, and many of us have a stash of them sitting in one of our kitchen cupboards. Sheet pans can be used to make everything from pizza to pancakes to stir fry. The options are limitless!

Ingredients For Sheet Pan Chicken Sausage

Sheet pan dinners often require only a few ingredients and this recipe is no exception. It can be made with any veggies you've got laying around in the fridge and any variety of sausage.

Here's what you'll need to make it.

  • 1 12 oz. package Mild Italian Chicken Sausage (or sausage of choice)
  • 4 cups Green Beans (trimmed and chopped)
  • 4 cups Cauliflower Florets
  • 1 Bell Pepper (any color)
  • 2 Tbsp. Olive Oil
  • 2 tsp. Garlic Powder
  • 2 tsp. Onion Powder
  • ¼ tsp. each Kosher Salt and Pepper
  • Parmesan Cheese (optional)
  • Fresh Herbs (such as basil or parsley) (optional)

How To Make Sheet Pan Chicken Sausage and Veggies

As far as dinners go, this is one of the easiest out there. The only real effort involves chopping the vegetables.

  1. Start by thoroughly rinsing and drying 1 small head of cauliflower, 1 bell pepper, and 1 lb. green beans. Trip the ends of the green beans.
  2. Once the green beans are trimmed, chop the beans into halves or thirds (depending on your preference). This yields roughly 4 cups of chopped green beans.
  3. Break 1 small head of cauliflower into florets. Cut any larger pieces into smaller florets, making sure they are all relatively the same size to ensure even cooking. This yields roughly 4 cups of chopped cauliflower. Any extra cauliflower can be stored in an airtight container in the fridge up to a week and used in another recipe.
  4. Remove the stem, seeds, and membranes from 1 bell pepper (any color). Cut the pepper into chunks.
  5. Place the green beans, cauliflower, and bell peppers onto a large sheet pan (I find that either 11x17" or 12x16" works great).
  6. Drizzle the vegetables with 2 Tbsp. olive oil and sprinkle with 2 tsp. each of garlic powder and onion powder. Sprinkle ¼ tsp. kosher salt and pepper over the top.
  7. Toss the veggies in the olive oil and spices until completely coated.

What Kind Of Sausage Is Best?

One of my favorite things about sheet pan meals is that they can be customized according to your liking (or according to what you've got in your fridge or freezer at the moment).

I used mild Italian chicken sausage to make this sheet pan dinner because I find that the flavors of the sausage lend themselves well to veggies like green beans and cauliflower.

I generally prefer chicken sausage to pork sausage, simply because it is lighter but you can use ANY variety of sausage in place of chicken sausage.

You can sub sausage made with any type of meat from turkey to pork to beef to venison to make this meal. If you'd like to keep the recipe vegetarian or vegan, feel free to use veggies sausages of choice.

If find that the best type of sausage for sheet pan meals are those which contain a lot of spice or smokiness. The spices and fats from the sausage coat the veggies as they cook, giving them great flavor.

Here are some tasty sausages that are perfect when making sheet pan dinners:

  • Mild or Spicy Italian Sausage
  • Andouille Sausage
  • Kielbasa Smoked Sausage
  • Chorizo Sausage
  • German Bratwurst
  • Country Sausage or Ring Bologna

What Temperature Do You Cook Sheet Pan Meals?

I find that 400 degrees Fahrenheit works well when making sheet pan meals. This is the temperature at which I roast vegetables like Brussels sprouts and broccoli.

  1. Heat oven to 400 degrees Fahrenheit.
  2. Cut 1 12 oz. package of sausages into large chunks. Place the sausages over the top of the vegetables, being sure not to overcrowd the pan.
  3. Place the sheet pan in the oven and roast for 30 minutes or so, or until the vegetables are softened and golden brown on the outside. The sausages should be fully cooked and slightly crispy.
  4. Remove the pan from the oven when finished.

The safe internal temperature for sausage is 165 degrees Fahrenheit and can be checked using a food thermometer. Feel free to cook for an additional couple of minutes if the sausage has not been cooked through.

Can I Sub Any Of The Veggies?

Just as the sausage can be customized according to your preference so can the veggies.

You can use any vegetables you like in place of the cauliflower, green beans, and bell peppers. It's important to keep in mind that the cooking times of vegetables may vary slightly.

Be sure to choose veggies that are low in carbs if you'd like to keep this recipe low carb.

Here are some vegetables that work well when making sheet pan meals:

  • Broccoli
  • Potatoes
  • Sweet Potatoes
  • Zucchini
  • Asparagus
  • Butternut Squash
  • Carrots

What To Serve With Sheet Pan Dinners

Meals like this Sheet Pan Chicken Sausage and Veggies are great on their own and make for an easy weeknight dinner or can enjoyed for lunch throughout the week.

I love to add a sprinkle of Parmesan cheese and some minced herbs like basil or parsley but this is entirely optional.

Sausage does well when paired with something tangy like pickled peppers, pickled onions, or a giardiniera (an Italian pickled condiment). You can also squeeze a lemon over the top to lighten it up.

This chicken sausage and veggies can be paired with other roasted vegetables like roasted Brussels sprouts or herb roasted potatoes.

Sides like chunky mashed potatoes and savory sweet potatoes are great, in addition to salads like marinated tomato salad, balsamic green bean salad, and pickled beet salad.

Grains like Wild Rice and Green Lentils also make a nice pairing to the sausage and veggies.

How Long Does This Sheet Pan Meal Last In The Fridge?

Any leftovers may be stored in an airtight container in the fridge for 3-4 days.

This recipe is great for meal prep because it can be portioned out into individual containers and eaten for lunch throughout the week.

  • 2 tsp. onion powder
  • ¼ tsp. kosher salt
  • ¼ tsp. pepper

Instructions
 

  • Heat oven to 400 degrees Fahrenheit.

  • Cut 1 12 oz. package of sausages into large chunks. Place the sausages over the top of the vegetables, being sure not to overcrowd the pan.
  • Place the sheet pan in the oven and roast for 30 minutes or so, or until the vegetables are softened and golden brown on the outside. The sausages should be fully cooked and slightly crispy. (The safe internal temperature for sausage is 165 degrees Fahrenheit and can use checked using a food thermometer).
  • Remove the pan from the oven when finished.
  • To Serve: Serve with Parmesan cheese and fresh herbs such as basil or parsley (optional). Other serving suggestions include pickled peppers, onions, or Italian giardiniera (optional).

Notes

Any veggies may be substituted for the ones used in this recipe. Keep in mind that cooking times may vary for some vegetables.
Feel free to substitute the chicken sausage with sausage of choice.
