This homemade fluffy Old Fashioned Banana Pancakes recipe is fluffy and made with bananas and cinnamon. Perfect for breakfast with syrup!

There is nothing like a batch of these Banana Pancakes! It's been one of my go-to breakfast recipes for years.
I firmly believe that one of the great joys in life are bread-y semi-sweet breakfast foods like pancakes. Pancakes, waffles, French toast, muffins - I love it all. I love savory breakfast dishes as well but there is nothing like a stack of pancakes and a cup of coffee.
My husband and I have a little tradition of making pancakes and drinking coffee (OK, I drink coffee and he drinks tea) when we get up on the weekends.
My all-time favorite pancake recipe is one I found years ago in an old church cookbook. It's got an inscription from my Grandma on the front cover and everything.
One of my favorite versions of this recipe includes adding sliced bananas that caramelize as the pancake cooks and a hint of cinnamon.

This recipe is gluten free and uses a gluten free flour blend, such as Bob's Red Mill 1 to 1 Flour or Cup 4 Cup.
A gluten free flour blend works just like AP flour and there is not need for complicated ingredients or substitutions, so I love it for semi-sweet breakfast recipes like pancakes.
Feel free to use regular AP flour if gluten is not an issue for you.
How To Make Pancake Batter
- These pancakes start off by combining 2 cups of gluten free flour blend (or AP flour if not gluten free), 2 Tbsp. sugar, 4 tsp. baking powder, and a pinch of salt to a large mixing bowl. Stir to combine.
- In a smaller bowl, combine 2 eggs, 1 ½ cups milk, and ¼ cup olive oil. Whisk these ingredients together until completely combined.
How To Make Pancakes Fluffy
The next step is to combine the wet and dry ingredients. Add the egg and milk mixture to the dry ingredients a little at a time and stir to combine.
Do this until all the wet ingredients are added to the dry ingredients and stir just until combined.
The key to light and fluffy pancakes is not to over-mix the batter. Over-mixing the batter will result in 'tough' pancakes.
The addition of baking powder also adds to the fluffiness of these pancakes.
The batter will be lumpy and that is just fine.
How To Make Old Fashioned Banana Pancakes
Now it's time to cook the Old Fashioned Banana Pancakes. Heat your favorite 'pancake pan' to around medium.
Heat is tricky when it comes to pancakes because the pan needs to be hot enough to give them a nice caramelization but not so hot that they burn. I find that somewhere between medium-low and medium works best.
- Melt some butter in the pan and add ¼ cup or so of pancake batter. The batter will spread out a bit after it's added to the pan. Feel free to make as many pancakes at a time as you like. I like to make them one at a time so they don't all run together.
- Cut a couple of bananas into thin slices and add them to the uncooked side of the pancake.
- Sprinkle a dusting of cinnamon on top of the bananas.
- Cook the pancakes for 2-3 minutes or so or until the pancake starts to bubble. Bubbling is the best indication that a pancake is ready to be turned.
- Cook for another 2 minutes or so on the other side.
The bananas will get a little caramelized once the pancakes are flipped and hit the hot surface of the pan.
That caramelized banana flavor and the hint of cinnamon are what make these pancakes.
Cooking times vary slightly when it comes to pancakes depending on the type of pan and the temperature of the surface.
They should be nice and golden when all is said and done.

What To Serve With Banana Pancakes
Fruit would be great with these Old Fashioned Banana Pancakes! Blackberries, blueberries, strawberries, raspberries (any type of berry would work, actually).
You could even add more fresh banana slices on top.
Warm maple syrup is ALWAYS a welcome addition to pancakes.
Yogurt or granola is also a great option.

Old-fashioned recipes are the best. They're the ones that never go out of style but can easily be customized to fit our changing tastes.

Ingredients
- 2 cups gluten free flour blend or AP flour if not gluten free
- 2 Tbsp. sugar
- 4 tsp. baking powder
- pinch kosher salt
- 2 eggs
- 1 ½ cups Kemps® Probiotic Milk or milk of choice
- ¼ cup olive oil
- 4 bananas
- 1 Tbsp. cinnamon
- 1 Tbsp. butter
- maple syrup optional
- fresh fruit optional
Instructions
- Combine 2 cups gluten free flour blend (or AP flour if not gluten free), 2 Tbsp. sugar, 4 tsp. baking powder, and a pinch of salt in a large mixing bowl. Stir to combine.
- Combine 2 eggs, 1 ½ cups milk, and ¼ cup olive oil in a small mixing bowl. Whisk to completely combine.
- Slowly add the wet ingredients to the dry ingredients, stirring to combine. Continue until all the wet ingredients are added to the dry ones. Stir just until combined, careful not to over-mix. Batter will be lumpy.
- Heat a pan to medium-low/medium. Melt some butter in the pan. Add ¼ cup or so of the batter to the pan. The batter will spread a little as it hits the pan.
- Cut 2 bananas into thin slices.
- Place some of the banana slices onto the uncooked side of the pancake. Sprinkle a dusting of cinnamon on top of the bananas.
- Cook the pancake for 2-3 minutes or until it starts to bubble. Flip the pancake and cook for another 2 minutes or so on the other side. The pancakes should be golden brown.
- Repeat with the remaining pancake batter. *Make sure to watch the temperature of the stove top so that the pan does not get too hot. Simply reduce heat if the pancakes begin to burn.*
- Top the pancakes with butter, maple syrup, additional banana slices, and other fruit if desired.
