This spiced Roasted Mixed Nuts recipe is a flavorful snack! It's tossed in a sweet and sticky maple glaze made with rosemary and paprika.

These Spiced Mixed Nuts are basically the best of all worlds. They're tossed in a sticky glaze that's sweetened with maple syrup and flavored with savory spices like smoked paprika and rosemary.

There seems to be some consensus out there that the best snacks are the ones with a sweet and salty flavor combination. Many popular snacks available today contain some combo of sweet, salty, and savory flavors.

This recipe is all of that sweet and savory goodness is added to melted butter which is then tossed with a variety of mixed nuts and then roasted in the oven until fragrant.

These roasted mixed nuts are, in one word, irresistible. They smell amazing while roasting in the oven and taste even more so when finished.

They are absolutely perfect for holiday and Christmas parties or any time of the year!

What Nuts Go Well Together?

One reason I love this recipe is that it's super versatile. You can use any variety of nut you like.

I've never met a nut that I don't like so I went for a variety - Walnuts, Pecans, Macadamia nuts, Cashews, Pistachios, and Almonds. The variety of nuts provides a great depth of flavor.

You can use any combo of nuts you like. The only thing I suggest is that the nuts you choose are lightly salted or unsalted.

If the nuts are fully salted in the package the recipe will turn out way too salty. It's best to remember that you can always add more salt but can't always take it away.

Ingredients For Maple Spiced Nuts

Here's what you'll need to make them.

  • 16 oz. (or 4 cups) Lightly Salted Mixed Nuts or Raw, Unsalted Mixed Nuts of choice
  • 3 Tbsp. Unsalted Butter
  • 5 Tbsp. Maple Syrup
  • 2 tsp. Smoked Paprika (or regular paprika)
  • 1 Tbsp. Dried Rosemary
  • 1 tsp. Sriracha
  • ¾ tsp. Kosher Salt (if using unsalted nuts) (split)

If using lightly salted nuts, there is no need to add the extra kosher salt.

How To Make Spiced Nuts

These rosemary maple spiced nuts are so easy to make and they're great during the holiday season.

Rosemary is the perfect herb to enjoy during the winter months because it's hearty and it can stand up to other bold flavors.

The smoked paprika provides a great smokiness and complements the other flavors nicely.

Maple syrup is one of the best sweeteners out there. I use it in both sweet dishes like this maple bourbon pecan pie and maple walnut baklava bites and savory ones like these maple dijon roasted Brussels sprouts and fall harvest wild rice salad.

And butter is, well, butter. Butter always makes things more delicious.

A buttery paste is made by combining all the ingredients in a small bowl. The nuts are placed on a baking sheet, tossed in the buttery paste and roasted in the oven.

The sugars in the maple syrup form a sticky glaze as the nuts bake and the result is a crunchy, buttery, salty, sweet, savory, and a little bit spicy party treat.

How To Make The Maple Glaze

You can't have maple spiced mixed nuts without the buttery glaze. Raw, unsalted nuts are delicious as-is and certainly more healthy to eat but it's the holiday season and calories don't count this time of year, right?

If you're looking for more 'calories don't count' holiday recipes but sure to check out these crispy old fashioned sugar cookies, chewy peanut butter blossoms, chocolate dipped shortbread cookies, and peppermint chocolate mini cheesecakes!

  1. To make the glaze melt 3 Tbsp. unsalted butter in a small bowl. Make sure the butter is melted but not browned or burned.
  2. To the butter add 5 Tbsp. maple syrup, 2 tsp. smoked paprika (or regular paprika), 1 Tbsp. dried rosemary, 1 tsp. Sriracha, and ½ tsp. kosher salt (if using unsalted nuts) Leave out the kosher salt if using lightly salted nuts. Stir until completely combined.
  3. The mixture will look somewhere between a glaze and a paste.

A Few Ingredient Tips

  • You can sub regular paprika for smoked paprika if necessary but the smoky flavor won't be as strong.
  • You can use fresh rosemary in place of dried rosemary if you like. Feel free to adjust the amount of fresh rosemary according to your taste.
  • You can add more Sriracha if you like more spicy flavor. Feel free to sub red chili flakes or your favorite hot sauce if you don't have Sriracha. Alternately, you can leave it out altogether if you don't like spicy flavors.

What Temperature Should You Roast Nuts?

Once the glaze has been prepared it's time to roast the nuts in the oven.

  1. Heat the oven to 325 degrees Fahrenheit.
  2. Line a baking sheet with a piece of parchment paper. I recommend not skipping this step as the maple glaze becomes quite sticky in the oven and the baking sheet is not fun to wash without the parchment paper protecting it.
  3. Arrange the mixed nuts on top of the parchment paper.
  4. Pour the glaze over the nuts and toss them in the glaze using a spatula. Make the all of the nuts are completely coated in the glaze and that they're spread out evenly over the baking sheet.

I normally roast everything from Herb Roasted Potatoes to bananas for Roasted Banana Bread to walnuts for Spinach Walnut Pesto at 400 degrees but for this recipe I recommend roasting at 325 degrees Fahrenheit.

The lower temperature will help prevent the butter and sugars in the maple syrup from burning in the oven.

How Long Do You Roast Nuts For?

  1. Once the nuts are totally coated in the glaze pop the baking sheet in the oven for 18-20 minutes.
  2. Remove the baking sheet after 10 minutes and stir the nuts with a wooden spatula. This will prevent them from forming clumps and sticking together.
  3. Roast for another 8-10 minutes, keeping an eye on the nuts to prevent them from burning.
  4. Remove the baking sheet after 20 minutes, stir again with a wooden spatula to prevent them from clumping, and sprinkle them with another ¼ tsp. kosher salt (add the ¼ tsp. kosher salt if using either lightly salted or unsalted nuts in this step). Toss until combined.

Allow the nuts to cool completely before serving. The sugars in the glaze become quite hot as it cooks. It's best to wait until completely cooled before serving.

How To Store Homemade Roast Nuts?

As I mentioned, these roasted mixed nuts are pretty addicting so they likely won't last long.

They can be stored in an airtight container up to a week at room temperature or up to 2 weeks in an airtight container in the fridge.

These roasted nuts are best eaten fresh and I wouldn't recommend keeping them for more than 2 weeks.

What To Serve With Roasted Mixed Nuts?

This is perfect party food and great to serve for any holidays.

Spiced nuts are a great addition to a charcuterie platter with some assorted cheeses, cured meats, olives, and crackers.

Ingredients
 
 

  • 4 cups lightly salted mixed nuts or raw, unsalted mixed nuts

This recipe may be doubled to serve more people.
You can use any variety of nuts you like but make sure they are either lightly salted or raw and unsalted.
These nuts can be stored in an airtight container up to a week at room temperature or up to 2 weeks in an airtight container in the fridge.
These roasted nuts are best eaten fresh and I wouldn't recommend keeping them for more than 2 weeks.
Feel free to use regular paprika for a less smoky flavor, or sub half smoked and half regular paprika.

    Smelled great, but too much smoked paprika. They tasted like bbq potato chips, which I like, but not what I was looking for. I’d cut that back next time

      Hi Lisa - Thanks for the feedback! I actually reduced the amount of smoked paprika in the recipe and then made a note that regular paprika can be used in place of, or combined with the smoked paprika for a more balanced smoky flavor. 🙂

    Just found this recipe will make later. Would it be possible to mix the nuts in the glaze and then place the mixture on the baking sheet.
