I never understood the fuss about green bean casserole until I tried a version made entirely from scratch using fresh ingredients. After a few bites, I was a convert and now make it a point to whip up a batch every year as the holidays roll around.
It requires a bit more time to prepare this dish from scratch, but is well worth the effort. Many green bean casseroles are made using canned soup and as a result are not gluten free. This version is made using homemade cream of mushroom soup, making it a great gluten free side dish.
This recipe is prepared using fresh green beans that are blanched, shocked, and then baked in a casserole dish with a creamy soup packed with mushrooms.
It's savory, decadent, and perfect served alongside the roasted turkey and all of your favorite side dishes as part of a Thanksgiving or holiday menu. I find that the fresh ingredients and homemade soup make all the difference.

As mentioned, the process of making green bean casserole from scratch is a bit more labor-intensive, but well worth the effort.
The process of making it starts by mincing the garlic and shallots, washing and trimming the green beans, and chopping the mushrooms.
The green beans are then blanched and shocked in ice water. The mushrooms are sauteed in a skillet along with the garlic and shallots and used to make a creamy soup.
The soup is poured over the green beans in a casserole dish and the whole thing is baked in the oven until hot and bubbly, then topped with crispy French fried onions.
Ingredients For Gluten Free Green Bean Casserole
Here's what you'll need to make it.
- 4 cloves Garlic
- 2 Shallots
- 2 lbs. Fresh Green Beans (washed and trimmed)
- 2 8 oz. packages Button or Cremini Mushrooms (or mushrooms of choice)
- 4 Tbsp. Butter (split)
- 3 Tbsp. Gluten Free Flour Blend (such as Bob's Red Mill 1 to 1 Flour) (or regular AP flour if not gluten free)
- 1 scant cup Low Sodium Chicken Broth
- ½ Cup Whole Milk
- ½ tsp. Garlic Powder
- 1 tsp. Worcestershire Sauce
- 1 tsp. Kosher Salt (split)
- ½ tsp. Pepper (split)
- 2 cups Gluten Free French Fried Onions (or regular French fried onions if not gluten free)


How To Blanch Green Beans
Blanching and shocking the green beans simply means to cook them for a short period of time in boiling water and then to transfer them to an ice bath.
This allows them to cook for a short amount of time but still retain their crispy texture and bright color. The green beans will then bake evenly in the casserole and do not become mushy as they bake.
The process of blanching and shocking helps the green beans to remain 'crisp tender'.
- Wash and trim 2 lbs. of fresh green beans. Cut the green beans into halves or thirds (depending on your preference).
- Bring a pot of water to a boil. Once the water is boiling, add the green beans and boil for 3 minutes. After 3 minutes, remove the beans with a slotted spoon or spider strainer and place them into a bowl of ice water.
- Cool the green beans in the bowl of ice water and then place them in a strainer to drain them. Make sure to allow the blanched green beans to drain thoroughly.
- Once drained, place the beans in a 9×13 inch casserole dish.

Is Cream Of Mushroom Soup Gluten Free?
Many green bean casserole recipes are made using canned cream of mushroom soup, which is not gluten free (although, there are now some canned gluten free cream of mushroom soups on the market).
Gluten free or not, cream of mushroom soup is always best made from scratch. It's made using fresh mushrooms, garlic, and shallots that are sauteed in a skillet.
The mushroom mixture is then combined with chicken broth, whole milk, and some spices that come together and form a creamy, savory, and decadent soup that forms the base of this gluten free green bean casserole.
Which Mushrooms Are Best For Cream Of Mushroom Soup?
I used white button mushrooms to make this cream of mushroom soup because they are inexpensive and easy to find. However, you can use any variety of mushrooms you like.
No matter which variety of mushrooms are used, it's important to sauté them in a skillet with some butter, salt and pepper. This helps to bring out their natural flavor, which contributes to the overall flavor the casserole.
Here are some mushrooms that are great for soup:
- Cremini (also known as Baby Bella)
- Portobello
- Oyster
- Shiitake
- Porcini




How To Make Gluten Free Cream Of Mushroom Soup
I was never excited about cream of mushroom soup until I tried the homemade version. The flavor of the mushrooms really shines when made from scratch.
Make sure to wipe the mushrooms clean with a damp towel before chopping them. I also recommend removing the stems, as they tend to be a bit woody.
It's best to chop the mushrooms into small pieces when making cream of mushroom soup.
- To make the soup, mince 4 cloves of garlic and 2 shallots.
- Wipe 2 8 oz. packages of white button mushrooms (or mushrooms of choice) clean with a damp towel. Remove the stems and discard.
- Chop the mushrooms into small pieces.
- Place a skillet on the stove top and heat to medium. Once heated, add 2 Tbsp. of butter.
- Once the butter is melted, add the minced garlic and shallots to the skillet. Sauté for 4-5 minutes, stirring often.
- Add the chopped mushrooms, along with ¼ tsp. each kosher salt and pepper. Sauté for 8-10 minutes, stirring occasionally.
- Remove the mushroom mixture from the skillet and set aside.
- Return the skillet to the stove top and add another 2 Tbsp. of butter.
- Once melted, add 3 Tbsp. gluten free flour blend (or AP flour if not gluten free). Stir the butter and flour mixture for 1 minute, creating a roux.
- Slowly add 1 scant cup of gluten free chicken broth and ½ cup of whole milk to the skillet. Cook over medium-low heat, stirring slowly with a whisk.
- Continue to cook for 5-6 minutes, allowing the soup to thicken (it may look chunky at times).
- Add ½ tsp. garlic powder, ¾ tsp. kosher salt, ½ tsp. pepper, and 1 tsp. Worcestershire sauce to the skillet. Whisk until combined and continue to cook the soup until it is thick and creamy (it should have the consistency of gravy).


How To Make Green Bean Casserole
Once the green beans are blanched and the cream of mushroom soup prepared, they are combined in a casserole dish and baked in the oven.
- Heat the oven to 375 degrees Fahrenheit.
- Pour the blanched and drained green beans into a 9x13 inch casserole dish.
- Pour the cream of mushroom soup over the green beans and toss until they are completely coated in the soup mixture.
- Place the casserole dish into the oven and bake (uncovered) for 30 minutes.
- After 30 minutes, remove the casserole dish and sprinkle 2 cups of gluten free French fried onions (or regular French fried onions if note gluten free) evenly over the top.
- Return the casserole dish to the oven and bake for another 5 minutes. Remove the casserole dish and allow to cool for at least 5 minutes.

Where To Find Gluten Free French Fried Onions
Gluten free French fried onions are one of those items that can be tricky to find in many grocery stores.
It may be easier to locate them in organic or specialty grocery stores, such as Whole Foods or Fresh Thyme.
Sometimes, French fried onions are labeled as 'Crispy Fried Onions' or 'Crispy Onions' (make sure to check the label to make sure they are gluten free). I recommend searching for them in your local organic grocery store or food coop, or ordering them online if unable to locate them in store.
Feel free to use regular French Fried Onions if not gluten free.
Alternately, you can make your own gluten free French fried onions if you are unable to purchase them.

How Long Does Green Bean Casserole Take To Bake?
This green bean casserole is baked (uncovered) for 30 minutes at 375 degrees Fahrenheit. After 30 minutes, the French fried onions are added to the top of the casserole and it bakes for another 5 minutes.
I recommend allowing the casserole to sit at room temperature and cool for at least 5 minutes before serving. This will allow the cream of mushroom soup to thicken and the dish will have less of a 'soupy' consistency.
The longer the casserole sits, the thicker the cream of mushroom soup will get.

What To Serve With Green Bean Casserole
This Gluten Free Green Bean Casserole is classic Thanksgiving fare and pairs perfectly with roast turkey in addition to all the holiday favorites.
I love to serve it alongside this wild rice fennel stuffing, cheesy Au Gratin potatoes, buttermilk mashed red potatoes, or fennel herb stuffing.
Other great pairings include these maple mustard Brussels sprouts, savory mashed sweet potatoes, kohlrabi mash, and butternut squash feta salad.
Of course, Thanksgiving side dishes like this one are perfect with some homemade dinner rolls, savory scones, or buttermilk biscuits.

Can This Casserole Be Made Ahead Of Time?
Yes! To help save some time you can make it the day ahead.
- To make ahead, simply prepare the green bean casserole as directed, but do not add the French fried onions or bake it.
- Cover the unbaked casserole with tinfoil, place in the refrigerator, and then bake as directed the next day.
Can Green Bean Casserole Be Frozen?
For optimal taste and texture, I do not recommend freezing this green bean casserole.
How Long Does It Last In The Fridge?
Leftovers may be stored in the refrigerator for 3-3 days after cooking in an airtight container.
Make sure to allow the casserole to cool completely before transferring to the fridge for storage.
Can I Make This Recipe Even If I'm Not Gluten Free?
Absolutely!
Simply use AP flour in place of the gluten free flour blend and regular French fried onions if gluten is not an issue for you.
