Mojitos are made by muddling limes, mint, and sugar in the bottom of a highball glass. They are then topped with white rum and finished with club soda.
The bright flavors found in a mojito are perfect for the warmer summer months.
A mocktail is simply a cocktail made without alcohol. There are times when we crave something refreshing but don't feel like dealing with a hangover.
They're also great to have on hands for guests who do not indulge in alcohol.

Ingredients For Strawberry Mojito Mocktail
Here's what you'll need to make it.
- 1 lb. Fresh Strawberries
- ¼ cup Lime Juice (equals 4-5 limes)
- ½ cup Water
- ½ cup Sugar
- ¼ cup Fresh Mint
- 1-2 bottles Club Soda
How To Make A Strawberry Mocktail
This is one of those drinks that feels fancy enough to have ordered at a high-end bar. Your guests will think you have put a lot of work into making it but in reality is simple to assemble.
I love that it's made with fresh strawberries so there is no need for a pre-made mix that's full of sweeteners and preservatives. The flavor of this strawberry mojito is natural and not laden with extra sugar.
This recipe calls for 1 lb. of fresh strawberries. It's ideal this time of year when strawberries are in season.
If you can't find fresh strawberries feel free to use frozen. If using frozen strawberries, make sure to place them in a strainer in the sink and allow them to thaw before using.
- Start by thoroughly washing 1 lb. of fresh strawberries.
- Hull the strawberries or simply chop the green stems off with a knife.
- Cut the strawberries in halves or quarters, depending on the size of the berry.

How To Make Simple Syrup
A simple syrup is a mixture made from equal parts water and sugar. The sugar is added to heated water until just dissolved.
Simple syrup is commonly added to cocktails for extra sweetness. It's preferable to add sugar in syrup-form as opposed to raw so that it doesn't make the cocktail grainy.
If sugar doesn't dissolve it tends to settle at the bottom of the glass and makes for an unappealing texture.
- To make the simple syrup add ½ cup water to a small saucepan and heat the water to medium-low but do not bring to a boil.
- Add ½ cup sugar to the water and stir until all of the sugar has dissolved.
- Once dissolved, pour the simple syrup into a glass container (a mason jar works great) and allow to cool.
A Few Things
- It's important that the simple syrup cool completely before adding it to the mojito or it will melt the ice and defeat the purpose of enjoying a cold beverage.
- You can make the simple syrup ahead of time and store it in the fridge for a week or two in an airtight container. Any leftover simple syrup may be stored this way as well.
- If the water is too hot it may cause the syrup to turn a slight brown or orange color which means that it has caramelized. If caramelized too much it means that the sugar burnt. Slight caramelization is fine, especially if it tastes good. If you find that it is burnt simply start the process over.
How To Make A Strawberry Puree
The star of this Strawberry Mojito Mocktail is definitely the strawberry puree. It's made with chopped berries, simple syrup, lime juice, and fresh mint.
I find that throwing all of the ingredients into a blender and pulsing until combined works well and makes for easy cleanup.
- Add 1 lb. of chopped strawberries, ¼ cup of fresh lime juice (equals 2-3 limes), ¼ cup fresh mint, and ¼ cup of the cooled simple syrup to a blender. You can also use an immersion blender.
- Blend until the mixture is totally combined. The texture should be smooth and easy to pour.
A Few Things
- You can add as much or as little of the simple syrup as you like. I do not care for super sweet drinks and found ¼ cup to be perfect. If you like your mojito a bit sweeter feel free to add the entire ½ cup.
- You can adjust the amount of lime juice and mint according to your tastes.
Are Mocktails Healthy?
I love this Strawberry Mojito Mocktail because as far as drinks go it's pretty healthy. The ingredients are fresh and natural and it uses nothing artificial.
It's one of those things that makes you feel better after a couple (as opposed to imbibing in too many glasses of wine).
Once the strawberry mixture is pureed it's ready for mocktail hour.
How Long Does Strawberry Puree Last In The Fridge?
Any leftover puree may be stored in an airtight container in the fridge for 3-4 days.
Can It Be Frozen?
You can also freeze it by pouring into ice cube trays. Place the frozen strawberry cubes in an airtight freezer bag, label with the date, and store up to 3 months.
Feel free to pull out a few cubes as needed and top with club soda.
How To Serve Virgin Strawberry Mocktails
Mojitos are traditionally served in a highball glass and I find it the perfect serving vessel for this strawberry version.
- To make this mocktail fill a highball glass with ice. Pour ⅓ cup or so of the strawberry puree over the ice (the glass should be ⅔ full).
- Top the strawberry puree with club soda. Fill until the glass is totally full. Stir until combined.
- Garnish with fresh mint and a wedge of lime.
- Serve immediately.

Can I Add Rum?
Absolutely!
Mojitos are traditionally made with white rum. If you'd like to turn it into a cocktail add 1.5 oz. of white rum in addition to the club soda.
I would opt for a white rum like Bacardi and not a spiced rum like Captain Morgan as this will alter the flavor of the cocktail.
