This Grilled Ribeye Steak recipe is juicy and cooked to perfection. It's topped with a savory Dijon mustard red wine butter shallot sauce.

This Grilled Ribeye is grilled and finished with a buttery sauce made with red wine, Dijon mustard, and butter. It's one of those sauces that doesn't overtake but complements the flavor of the meat.

My husband and I purchased our first home last year and one of the best things about it is spending time outside on the patio grilling up our favorite meals. It's become sort of a 'fun challenge' to recreate dishes from our go-to restaurants.

After a long winter there is nothing better than hanging outside enjoying a perfectly cooked steak and a sparkly beverage (especially during those magical few weeks in Minnesota when all the snow has melted and the mosquitoes aren't out in full force).

Most of the time we stick with simple, healthy meals made with humble ingredients but every now and then it's nice to go all-out and grill up a thick, juicy steak. I say when going all-out top that steak with a decadent restaurant-quality sauce.

When it comes to elevating your favorite meals it's all about complementary flavors.

How To Season A Ribeye Steak

Grilling steak is one of those things that seems intimidating but in reality is totally do-able. Following a few simple steps yields delicious results every time!

I've learned everything I know about grilling meat from my husband - I find myself craving things like Southwest Burgers, Grilled Juicy Lucy Burgers and Thai Grilled Chicken fairly often and I'm pretty picky so he must be doing something right.

This recipe calls for ribeye but any variety of premium steak cuts such as New York Strip, Porterhouse, or T-Bone should work just fine. Ribeye is my personal favorite so that's the cut I gravitate toward.

  1. Remove 2 1-inch thick 1 lb. steaks from the package and place them on a plate. The first step is to generously salt them. The salt helps to flavor and tenderize the meat. Sprinkle ½ tsp. kosher salt over the first side, flip them, and sprinkle another ½ tsp. over the second side.
  2. Place the salted steaks in the fridge for a few hours before grilling.
  3. Remove the steaks from the fridge 30 minutes before grilling. This is a great time to fire up the grill.

How Long To Cook Ribeye On The Grill?

You can use any type of grill you like to prepare these steaks. We use a charcoal grill but gas will work just as well.

  1. Get the grill super hot - 450-500 degrees is ideal.
  2. Sprinkle ¼ tsp. pepper over the steaks, flip, and season with another ¼ tsp. pepper on the second side.
  3. Place the steaks on the direct heat, cover, and grill for 3 minutes on the first side.
  4. Flip the steaks, cover, and grill for another 3 minutes.
  5. Move the steaks to a more indirect heat on the side, cover, and cook until they reach your desired 'done-ness'.

How To Tell When Grilled Ribeye Is Done

Steak is one of those things that's pretty subjective - No two people like their steak cooked the same way.

  • Once the steaks have moved to a more indirect heat they are cooked to your desired done-ness. This recipe calls for 5-6 minutes on indirect heat for a medium-rare steak.
  • 7-8 minutes should get you to medium.
  • 9-10 minutes will get you medium-well.
  • 10-12 minutes for well done.

How To Make Shallot Sauce

You don't have to make a shallot sauce for this Grilled Ribeye Steak (or any other kind of sauce for that matter) when it comes to ribeye because it's pretty tasty on its own but we're going for restaurant-quality fare at home with this dish and that usually includes a decadent sauce.

This shallot sauce is my go-to steak sauce. I've made this recipe for years and it never disappoints.

  1. Mince 2 shallots. (You can substitute onions if you can't find shallots but the onions will be stronger in flavor).
  2. Heat a skillet to medium and add 1 Tbsp. butter. Once the butter is melted add the minced shallots and saute for 4-5 minutes.
  3. Add ⅓ cup red wine to the skillet and cook for 4-5 minutes, stirring often.
  4. Add ½ cup chicken or beef broth and 2 Tbsp. Dijon mustard. Stir until combined and cook for 5 minutes.
  5. Add another Tbsp. of butter and cook for another minute. The sauce should have reduced and become silky at this point.

The sauce can be prepared while the steaks are grilling or while they are resting.

What To Serve With Grilled Ribeye Steak

Once the Grilled Ribeye Steak has rested feel free to cut them into slices and spoon a generous amount of the shallot sauce over the top.

I love to enjoy grilled ribeye with vegetables like zucchini, corn, or potatoes. Any type of veggies from Brussels sprouts to mushrooms to asparagus would be great. This grilled corn salad or roasted vegetable salad is perfect.

Sliced toasted garlic bread, a light summer garden salad like this Marinated Tomato Salad, or a classic summer BBQ side dish like Crunchy Coleslaw are all delicious options.

  • 2 1 lb. ribeye steaks or steaks of choice
  • 1 tsp. kosher salt
  • ½ tsp. pepper

For The Shallot Sauce:

  • 2 shallots may substitute onion if necessary
  • 2 Tbsp. butter split
  • ⅓ cup red wine
  • ½ cup beef broth or chicken broth (gluten free)
  • 2 Tbsp. Dijon mustard

Instructions
 

  • Remove 2 1-inch thick 1 lb. steaks from the package and place them on a plate. The first step is to generously salt them. Sprinkle ½ tsp. kosher salt over the first side, flip them, and sprinkle another ½ tsp. over the second side.

Notes

Temperature is a more effective method for properly cooking a steak.
Here Is A General Guide:
  • 130 degrees Fahrenheit for Medium-Rare
  • 140 degrees Fahrenheit for Medium
  • 150 degrees Fahrenheit for Medium-Well
  • 160+ degrees Fahrenheit for Well Done
The safe internal temperature for steak is 145 degrees Fahrenheit – Internal temperature can be measure by using a grilling thermometer.
