Cast Iron Apple Crisp (Gluten Free)

Ingredients

For The Filling:

  • 3 large tart apples such as Granny Smith, yields 3-4 cups diced
  • 3-4 sweet apples such as Gala or Fuji, yields 3-4 cups diced
  • 2 Tbsp. lemon juice plus lemon zest
  • ¾ packed cup light brown sugar
  • ½ tsp. cinnamon
  • 2 Tbsp. gluten free flour blend or AP flour if not gluten free

For The Filling:

  • Heat the oven to 350 degrees Fahrenheit.
  • Start by peeling all of the apples. This recipe calls for 3 large tart apples (such as Granny Smith) and 3-4 sweet apples (such as Gala or Fuji).
  • Once the apples are peeled, dice them into small chunks, making sure that all of the apples are relatively the same size to ensure that they cook evenly (yields 6-8 cups diced apples).
  • Place all of the diced apples into a large bowl. Zest 1 lemon into the apples using a Microplane or small zester. Once the lemon is zested, cut it in half and add 2 Tbsp. of lemon juice to the apples (careful to remove any seeds).
  • Add ¾ packed cup of light brown sugar along with ½ tsp. cinnamon, and 2 Tbsp. gluten free flour blend (or regular AP flour if not gluten free). Stir all of these ingredients until completely combined.

For The Streusel Topping:

  • Add 1 ½ cups of gluten free rolled oats (or regular rolled oats if not gluten free), 1 cup of gluten free flour blend (or regular AP flour if not gluten free), 1 ½ tsp. cinnamon, ¼ tsp. nutmeg, ½ packed cup light brown sugar, ¼ cup granulated sugar, and ½ tsp. kosher salt to the bowl of a stand mixer.
  • Cut 12 Tbsp. of cold unsalted butter (equals 1 ½ sticks) into cubes and add them to the bowl.
  • Using the paddle attachment of a stand mixer combine all of the ingredients together on medium-low speed until the mixture resembles coarse crumbs.
  • Generously grease a 12 inch oven safe cast iron skillet with butter. The butter will help to prevent the apples from sticking to the bottom as it bakes.
  • Pour the diced apples (and juices) into the skillet and spread them evenly across the bottom.
    Sprinkle the streusel topping evenly over the top of the apples.
  • Place the skillet into the oven and loosely place a piece of foil over the top (this will prevent the streusel from burning).
  • Bake the apple crisp for 45 minutes. After 45 minutes, remove the foil and bake for another 15 minutes (60 minutes total).
    Remove the apple crisp from the oven and allow to cool before serving.

For The Whipped Cream (optional):

  • Pour 1 pint (equals 2 cups) of cold heavy whipping cream into the bowl of a stand mixer (feel free to add 2 Tbsp. of sugar or sweetener of choice for sweeter whipped cream).
  • Using the whisk attachment, mix the whipped cream on medium speed for 3-4 minutes, or until it forms stiff peaks (alternately, you can use an electric hand mixer).
    Store the whipped cream in the refrigerator until needed.
  • To Serve: Serve with whipped cream or ice cream (optional).

Notes

The nutritional information does not include the whipped cream.
The streusel topping may be made by using a pastry cutter if you do not have a stand mixer, but the texture may vary slightly.
Rolled oats are also known as old fashioned oats.
