For The Asparagus:
Heat oven to 400 degrees Fahrenheit.
Wash the asparagus spears and pat dry. Trim the woody ends off the bottom of the spears.
Cut each piece of prosciutto into quarters. Wrap a strip around each individual asparagus spear. Repeat with remaining asparagus and prosciutto.
Place the asparagus with prosciutto on a baking sheet. Drizzle with 1 Tbsp. of olive oil. Add ¼ tsp. each of kosher salt and pepper. Place pan in oven and bake for 15-16 minutes. The asparagus should soften and the prosciutto will caramelize slightly. Remove pan when finished and allow to cool slightly.
For The Dipping Sauce:
Add ½ cup sour cream, 3 Tbsp. Dijon mustard, 2 ½ Tbsp. lemon juice, 1 tsp. sugar, ¼ tsp. garlic powder, and 3 tsp. dried tarragon to a small bowl. Stir until completely combined.
Arrange asparagus with prosciutto on a serving platter and drizzle with the sauce. Alternatively, pour the sauce in a small serving bowl and use as a dipping sauce.
Asparagus can be topped with fresh tarragon or lemon zest for extra flavor.
Feel free to substitute any herb you like in place of tarragon.
