Chicken Pesto Flatbread Pizza

This Chicken Pesto Flatbread Pizza is fast and easy to make! It's topped with rotisserie chicken, tomatoes, mozzarella, and a balsamic glaze.

Ingredients

  • 2 gluten free flatbreads or regular flatbread if not gluten free
  • 6 Tbsp. basil pesto
  • 1 cup grape tomatoes
  • 3 cups rotisserie chicken diced or shredded
  • 1 cup fresh mozzarella cheese or shredded
  • 1 Tbsp. balsamic glaze for garnish
  • fresh basil for garnish

Instructions

  • Heat oven to 400 degrees Fahrenheit.
  • Cut 1 cup of grape or cherry tomatoes into halves or quarters, depending on what size you prefer your tomatoes.
  • Cut 1 cup of fresh mozzarella into chunks, or shred 1 cup of mozzarella cheese. Alternately, you can sub any variety of cheese that melts nicely, such as Fontina or Provolone.
  • Cut the breast portion of a rotisserie chicken into chunks, or shred it with your fingers. Alternately, you can do the same using leftover roasted, grilled, or any type of cooked chicken.
  • Place 2 gluten free flatbreads (or any flatbread if not gluten free) onto an ungreased large baking sheet. Place 3 Tbsp. of jarred basil pesto onto each flatbread and use a knife to spread it out evenly.
  • Arrange 1 - ½ cups of the rotisserie chicken over the flatbread. Sprinkle ½ cup of diced tomatoes evenly over the chicken.
  • Top the flatbread with ½ cup (or desired amount) of the mozzarella chunks (or cheese of choice).
  • Place the baking sheet in the oven and bake for 10-12 minutes, or until the cheese has completely melted and the edges of the flatbread are crispy. Remove from the oven and cut into slices.
  • To Serve: Drizzle desired amount of balsamic glaze over the flatbreads and garnish with some freshly torn basil leaves.

Notes

Any type of flatbread (gluten free or regular) or pre-made pizza crust may be used to make this recipe. The cooking times may vary, depending on the size of flatbread used.
Feel free to use leftover roasted chicken, or any type of cooked chicken in place of the rotisserie chicken.
This recipe yields 2 flatbread pizzas. Feel free to double it to serve more people.
