Lemon Herb Tahini Sauce

This vegan Lemon Herb Tahini Sauce recipe is easy and makes a great healthy dressing for salads! It's made with fresh herbs and garlic.

Ingredients

  • ½ cup tahini
  • ¼ cup lemon juice yields 1-2 large lemons
  • ¼ cup water
  • 2 cloves garlic
  • ¼ packed cup fresh parsley flat leaf or curly
  • ¼ packed cup fresh cilantro
  • ¼ packed cup fresh dill
  • ¼ tsp. kosher salt
  • ¼ tsp. pepper

Instructions

  • Peel 2 large cloves of garlic and cut them into chunks (there is no need to mince the garlic).
  • Roughly chop and measure out ¼ packed cup each of parsley (flat leaf or curly), cilantro, and dill.
  • Squeeze the juice of 1-2 large lemons into a measuring cup equaling ¼ cup liquid. Make sure to remove any seeds.
  • Add ½ cup tahini paste (make sure the brand used is gluten free if gluten is an issue for you), the ¼ cup of squeezed lemon juice, ¼ cup water, 2 cloves garlic, ¼ packed cup each of parsley, cilantro, and dill, and ¼ tsp. each of kosher salt and pepper to a food processor.
  • Pulse until the mixture is completely combined.
  • Adjust the consistency of the sauce as needed. Feel free to add a bit more water or lemon juice to thin out the sauce if it's too thick.
    If the sauce is chunky, pulse it until it smooths out and becomes pourable.
    Adjust salt and pepper levels as needed.
  • To Serve: Drizzle over grilled or roasted vegetables, meats, or on top of salads. Can also be used as a dip for veggies or as a spread on sandwiches or burgers. It pairs well with Middle Eastern or Mediterranean dishes.

Notes

Feel free to double the recipe if you would like a larger amount.
Any leftover sauce may be stored in an airtight container for up to a week in the refrigerator.
Adjust the consistency by adding more liquid if needed. Continue until the sauce is thick, but pourable.
