Prosciutto Wrapped Asparagus with Dipping Sauce

Ingredients

For The Asparagus:

  • 1 pound asparagus
  • 1 3 oz. package prosciutto
  • 1 Tbsp. olive oil
  • pinch kosher salt adjust to taste
  • generous pinch pepper adjust to taste

For The Dipping Sauce:

For The Asparagus:

  • Heat oven to 400 degrees.
  • Wash the asparagus spears and pat dry. Cut the woody ends off the bottom of the spears.
  • Cut each piece of prosciutto into quarters. Wrap a strip around each individual asparagus spear. Repeat with remaining asparagus and prosciutto.
  • Place the asparagus with prosciutto on a baking sheet. Drizzle with a tsp. or so of olive oil. Add a pinch of salt and generous pinch of pepper.
  • Place pan in oven and bake for 15-16 minutes. The asparagus should soften and the prosciutto will caramelize slightly. Remove pan when finished and allow to cool slightly.

For The Dipping Sauce:

  • Add ½ cup sour cream, 3 Tbsp. Dijon mustard, 2 ½ Tbsp. lemon juice, 1 tsp. sugar, ¼ tsp. garlic powder, and 3 tsp. dried tarragon to a small bowl. Stir until completely combined.
  • Arrange asparagus with prosciutto on a serving platter and drizzle with the sauce. Alternatively, pour the sauce in a small serving bowl and use as a dipping sauce.

Notes

Asparagus can be topped with fresh tarragon or lemon zest for extra flavor.
Feel free to substitute any herb you like in place of tarragon.
