Breaded Walleye Fish Fingers

This Walleye Fingers recipe can be oven baked or made in the Air Fryer! The fish fillets are coated in breadcrumbs and cooked until crispy.

Oven Baked Instructions:

  • Heat oven to 400 degrees Fahrenheit.
  • Completely thaw fish (if frozen) and place on a large plate or baking sheet. Pat both sides of the fish dry with some paper towels (patting the fish dry helps to remove excess water and prevents the fish from becoming rubbery as it bakes).
  • Cut each fish fillet down the middle into long strips. Cut each of those strips into halves or thirds (depending on the size of the fillets). Make sure the strips are relatively the same size and thickness so that they bake evenly.
  • Sprinkle the top of the fish fillets with ¼ tsp. each kosher salt and pepper.
  • Spray 1-2 baking sheets (depending on how many you need) with cooking spray.
  • Crack 3 eggs into a bowl and whisk them completely with a fork.
  • Place 1 cup gluten free Panko breadcrumbs (or any unseasoned breadcrumbs if not gluten free) ¼ cup gluten free flour blend (or AP flour if not gluten free), 2 tsp. lemon pepper, 2 tsp. paprika, 2 tsp. garlic powder, 2 tsp. onion powder, and ¼ tsp. each of kosher salt and pepper into a bowl. Stir until completely combined.
  • Place each of the fish strips into the egg and then into the breadcrumb mixture. Make sure each piece of fish is completely coated in the breadcrumbs.
  • Place the coated fish fillets onto the baking sheets that have been coated in oil. Spray the top of the fish fillets with cooking spray.
  • Place the baking sheet(s) in the oven and bake for 18 minutes. Cooking times may vary depending on the thickness of the fish fingers.
    The safe internal temperature for fish is 145 degrees Fahrenheit and may be checked using a food thermometer.
    The breading should be golden brown and slightly crispy when done.

Air Fryer Instructions:

  • Follow the recipe as directed.
  • Spray the air fryer basket with a non-aerosol cooking spray.
  • Place a few of the breaded fillets in the basket, making sure not to overcrowd it. Spray the top of the fillets with more cooking spray.
  • Set the temperature to 380 degrees Fahrenheit and cook for 6 minutes on the first side. Flip, and cook for another 6 minutes on the second side. Repeat with the remainder of the fish fillets.
  • Follow the same instructions as above to determine if the fish is fully cooked.
  • Serve with Easy Homemade Tartar Sauce and garnish with fresh lemon. Sprinkle with more kosher salt and pepper to taste.

Notes

Be sure to remove any bones if using freshly caught fish.
