Gouda Chicken Grilled Cheese

This Gouda Chicken Grilled Cheese Sandwich is easy to make and perfect for lunch! It's made with Dijon mustard, tomato, spinach, and cheese.

Ingredients

  • 8 slices gluten free sandwich bread or any bread if not gluten free
  • 4 slices Gouda cheese or cheese of choice
  • 4 slices Havarti cheese or cheese of choice
  • 1 package deli chicken breast can use leftover chicken or turkey
  • 4 Tbsp. butter softened
  • 4 Tbsp. Dijon mustard or mustard of choice
  • 2 cups fresh spinach or hearty greens of choice
  • 1-2 tomatoes sliced

Instructions

  • Cut 1-2 tomatoes into slices. Feel free to place the sliced tomatoes onto paper towels to help soak up any excess water if needed.
  • Spread a generous amount of softened butter onto one side of each slice of bread.
  • Spread a generous amount of Dijon mustard (or mustard of choice) onto one (or both) slices of bread (the side that is not buttered).
  • Add some spinach leaves (or hearty greens of choice) on top of the mustard.
  • Place desired amount of sliced chicken (or turkey) on top of the spinach.
  • Add a few slices of cheese on top of the chicken (feel free to adjust the amount and varieties of cheese to your liking).
  • Place a large skillet (such as a cast iron skillet) on the stove top and heat to medium-low. Make sure the skillet is thoroughly heated before adding the sandwiches.
    Only add as many sandwiches as fit comfortably in the skillet. Overcrowding the pan makes it difficult to flip the sandwiches.
  • Cook the sandwiches on one side for 5-8 minutes, or until the cheese has started to melt and the bread is golden brown.
  • Flip and cook for another 5-8 minutes on the second side. Repeat with the remainder of the sandwiches.
    Cooking times may vary. Cook until the cheese has completely melted and both sides of the bread are golden brown.
  • To Serve: Cut the sandwiches in half and serve with your choice of side.

Notes

Feel free to add additional toppings such as pickled veggies, sundried tomatoes, roasted red peppers, or caramelized onions. See copy above for more ideas.
The amount and varieties of cheeses may be customized to your liking.
Feel free to use any leftover cooked chicken, turkey, or sliced deli turkey in place of sliced deli chicken. Alternately, the chicken may be omitted if you'd like to keep this sandwich vegetarian.
