Tear the kale into smaller pieces and place onto three separate roasting pans.
Drizzle 1 Tbsp. olive oil onto each pan. Make sure the kale is lightly coated, but not saturated.
Place all pans in the oven and bake for 12-15 minutes.
Check every 5 minutes or so to make sure kale is not burning. Edges should be crispy, but not burnt.
Remove from oven and immediately sprinkle generous pinch of salt and ¼ tsp. of spice onto each pan of kale. Each pan is sprinkled in a different spice.
Carefully remove the kale chips and serve each kind separately or all together in one bowl.
