Instant Pot Lentils (How To Cook)

  • Peel the skins from 2 cloves of garlic (the garlic cloves can be left whole).
  • Plug in the Instant Pot and set it to the Sauté setting. Add 1 Tbsp. of olive oil. Once the oil is heated add the garlic cloves and sauté for 1 minute, stirring often.
  • Add the rinsed lentils and saute with the garlic for another minute, stirring often.
  • Add 2 cups of water and ¼ tsp. each of kosher salt, pepper, and Italian seasoning. Stir until combined.
  • Place the cover on the Instant Pot and make sure it is locked and that the valve is in the sealed position. Press the Off/Cancel button and then hit the Manual button and set the timer for 10 minutes.
  • Allow the Instant Pot to pressurize, cook for 10 minutes, and then allow it to natural pressure release for 2 minutes. Flip the vent after 2 minutes and to release the extra steam.
    If you like lentils with a little more 'bite' flip the vent immediately after the 10 minutes of cooking time is up and skip the 2 minutes of natural pressure release.
  • Discard the garlic cloves and serve immediately. The cooked lentils may be added to salads, grain bowls, sandwiches, wraps, cooked soups or stews, healthy casseroles, eggs, cooked chicken or meat of choice, or served alongside rice or roasted vegetables.

Notes

Lentils are naturally gluten free, but they are often manufactured in a facility that also processes wheat. Be sure to check the label on the package of lentils for allergen information to make sure they are gluten free.
Brown or green (not French or red) lentils can be used to make this recipe.
