These Mushroom Gruyere Tartlets are made with gluten free Puff Pastry and mushrooms sautéed in white wine. The perfect party appetizers!
I happen to think mushrooms are the greatest thing ever. These Mushroom Tartlets are the perfect recipe to celebrate all the wonderful flavors that mushrooms have to offer.
The flavor of mushrooms seems to be one that we grow into. I don't hear a lot of five-year-olds requesting mushrooms as a pizza topping. Admittedly, I was one of those kids. You'd never find anything but pepperoni on my pizza.
Around age 20, though, something began to change. It could have been a hormone shift, a desire to seem more sophisticated, or just genuine curiosity that opened my palette.
Whatever the reason, I'm glad it happened. Because a life without things like mushrooms just seems...empty. Especially when it means you can enjoy things these tartlets. They're savory and totally decadent.

What Is The Best Kind Of Mushrooms For Tartlets?
There is a misconception that in order to create delicious mushroom recipes you need fancy and expensive varieties of mushrooms and that is simply not the case.
I make mushroom dishes ALL THE TIME using nothing but basic white button and/or Baby Bella mushrooms from the produce aisle in the grocery store.
My favorite recipes using white button or Cremini mushrooms include this Chicken Marsala Pasta, Roasted Mushroom Tapenade, and these Crispy Air Fryer Mushrooms.
You can certainly use any variety of fresh mushrooms that you like. If you have access to varieties such as Morel, Chanterelles, or Oyster mushrooms by all means feel free to use them.
Ingredients For Mushroom Gruyere Tartlets
Here's what you'll need to make them.
- 2 8 oz. packages Fresh Mushrooms (such as white button, Cremini, or baby Bella)
- 2 cloves Garlic
- 1 Tbsp. Butter
- ¼ cup White Wine
- 8 sprigs Fresh Thyme (or sub 1 tsp. dried Thyme)
- ½ tsp. each Kosher Salt and Pepper
- 1 ½ cups shredded Gruyere Cheese
- Lemon Zest
- 1 package Gluten Free Puff Pastry (or regular Puff Pastry if not gluten free)
How To Prepare The Mushrooms
To prepare the mushrooms simply wipe them with a dry towel to remove any excess dirt.
It's best not to wash mushrooms as they will absorb all that water and become chewy as they cook
- Once the mushrooms have been wiped clean with a dry towel chop them into small-ish pieces.
- While you're at it, mince 2 cloves of garlic. Because mushrooms and garlic are made to be together.
How To Sauté The Mushrooms In A Skillet
Mushrooms sauteed in a skillet with a few simple ingredients allows their natural flavors to come out and makes these tartlets super savory.
- Heat a skillet to slightly less than medium and add 1 Tbsp. of butter. Once the butter is melted add the garlic and saute for 2-3 minutes, stirring often.
- When the garlic is nice and fragrant, add all the mushrooms along with ½ tsp. each of kosher salt and pepper. The salt is actually going to draw the liquid out of the mushrooms and create a little bit of 'broth'. Saute for 5 minutes, stirring often.
- After 5 minutes or so add ¼ cup of white wine.
- To the mixture, add 4-6 sprigs of fresh thyme (you can sub 1 tsp. dried thyme if that's what you have on hand). Continue to cook for another 4-5 minutes. The wine will reduce a little bit and the thyme should infuse the mushrooms.
- Remove the pan from the heat and set aside.
Which Type Of Wine Is Best With Mushrooms?
This recipe calls for ¼ cup of white wine. A general rule for cooking with wine is to use a variety that you enjoy drinking.
I recommend a dry white wine such as Pinot Grigio or Sauvignon Blanc but you can use whatever white wine you've got on hand.
You can also leave it out altogether and sub ¼ cup chicken or vegetable broth if you like.
What Is The Best Puff Pastry For Mushroom Tartlets?
Now let's talk Puff Pastry. This stuff is great - It's basically just dough and butter that's layered on top of itself and literally 'puffs' as it bakes.
You can make it from scratch, but who has that kind of time? Buy a package, throw it in your freezer, and make sure to thaw before use.
If you are not gluten free you can use any brand of Puff Pastry you like. Be sure to thaw regular Puff Pastry dough out 45 minutes before use.
If you are gluten free you'll want to choose a gluten free brand of Puff Pastry. My favorite brand to use for this recipe is from Schar.
When using gluten free Puff Pastry make sure to thaw it for 3 hours before use.
Gluten Free Puff Pastry Dough may be found in the freezer section of your local grocery store or food coop.
If not located in the regular frozen foods section check the natural or organic freezer section.
Prepare The Puff Pastry Dough
- Make sure to thaw the Puff Pastry before use.
- There are 2 sheets per package. Remove both of them, sprinkle a little flour on a flat surface, and roll both of them out slightly. This will flatten the dough slightly.
- Use the lid of a mason jar, a circular cookie cutter, or press down with the top of a glass and cut circles in each sheet of pastry. Cut as many circles as you can and place the circles on two baking sheets.
- Take a fork and poke each circle 3-4 times. This will prevent the pastry from 'puffing' and will ensure that all of the ingredients stay on top of the circles as they bake.
How To Make Mushroom Gruyere Tartlets
Besides the mushrooms the other major component to these Mushroom Gruyere Tartlets is Gruyere cheese.
Gruyere is a Swiss cheese that's kind of nutty, earthy, and creamy. It melts beautifully and is perfect for things like these mini tarts or these Cheesy Au Gratin Potatoes.
You can find Gruyere cheese in the specialty cheese section of your local grocery store.
If you can't find Gruyere feel free to substitute Jarlsberg, Emmantaler, Gouda or smoked Gouda, Swiss, or even regular or smoked cheddar. Any variety of melting cheese should work just fine.
- Shred 1 8 oz. block of Gruyere cheese using a cheese grater (you should end up with 1 ½ cups of shredded cheese.
- Sprinkle 1 Tbsp. or so of shredded gruyere cheese onto each pastry round and top the cheese with a healthy spoonful of the mushroom mixture.
How Long Do Mushroom Tarts Take To Bake In The Oven?
- Place the assembled mushroom tartlets into an oven that has been heated to 400 degrees Fahrenheit.
- Bake the tartlets for 14-16 minutes.
Baking times may vary slightly depending on the thickness of the tartlets and the brand of Puff Pastry you are using.
The Mushroom Gruyere Tartlets are done when the bottoms are golden brown and the cheese has melted.
Remove the baking sheets from the oven when finished and allow to cool before serving.
What To Serve With Mushroom Tartlets
Remove from the baking sheet and place on a serving tray. Sprinkle the Mushroom Gruyere Tartlets with a generous amount of chopped fresh thyme and the zest of 1 lemon.
Mushroom, gruyere cheese, and thyme are heavily earthy flavors and the lemon zest brightens the whole thing up.

Can You Freeze Mushroom Tartlets?
These mini mushroom tarts can be made ahead of time and stored in the freezer for up to 3 months.
How To Freeze
- Prepare the tartlets as directed, leaving off the lemon zest.
- Allow to cool completely and transfer to a heavy-duty plastic freezer bag for storage.
- Push any excess air out of the bag, label with the date, and store up to 3 months.
How To Reheat
- Transfer the tartlets from the freezer to the fridge 24 hours before serving.
- Reheat in the microwave or in an oven heated to 350 degrees for 10 minutes or until heated through.
Truth be told, I had to limit myself to one tartlet or I'm afraid I would have eaten the whole pan. They're that good.

Mushroom Gruyere Tartlets
Ingredients
- 2 8 oz. packages mushrooms such as cremini or button mushrooms
- 2 cloves garlic
- 1 Tbsp. butter
- ½ tsp. kosher salt
- ½ tsp. pepper
- ¼ cup white wine such as Pinot Grigio or Sauvignon Blanc
- 6-8 sprigs fresh thyme OR 1 tsp. dried thyme
- 1 ½ cups shredded gruyere cheese
- Zest of 1 lemon
- 1 package gluten free puff pastry or regular puff pastry if not gluten free
Instructions
- Remove Gluten Free Puff Pastry from freezer 3 hours before use (remove 45 minutes before use if using regular Puff Pastry).
- Remove any excess dirt from the mushrooms with a dry towel. Once the mushrooms have been cleaned chop them into small-ish pieces.
- Mince 2 cloves of garlic.
- Heat a skillet to slightly less than medium and add 1 Tbsp. butter. Once the butter is melted add the minced garlic. Saute for 2-3 minutes, stirring often.
- Add the chopped mushrooms to the skillet along with ½ tsp. each of kosher salt and pepper. Saute for 5 minutes, stirring often.
- Add ¼ cup white wine and 4-6 sprigs of fresh thyme (may sub 1 tsp. dried thyme). Continue to saute for 4-5 minutes or until the wine cooks down. The mushrooms will be kind of broth-y at this point. Remove the pan from the heat once the mushrooms have cooked down.
- Sprinkle some flour on a clean surface and place the thawed sheets of Puff Pastry on them. Roll the pastry sheets out slightly with a rolling pin. Using a circular cookie cutter, a mason jar lid, or the top of a glass cut rounds from the Puff Pastry.
- Heat oven to 400 degrees Fahrenheit.
- Place the Puff Pastry rounds on two separate baking sheets. (You should be able to get 9-15 circular pieces from each sheet of pastry depending on the size of the rounds).
- Shred 1 ½ cups of Gruyere cheese (or cheese of choice) with a cheese grater. Sprinkle 1 Tbsp. or so on each pastry round. Place a heaping spoonful of the mushroom mixture on top of the shredded cheese.
- Bake for 14-16 minutes or until the bottoms of the pastry are golden brown and the cheese melted. Remove the baking sheets from the oven and allow to cool before serving.
- To Serve: Zest 1 lemon over the top of the mushroom tartlets using a microplane. Garnish with additional chopped thyme (optional)
